EeePC runs Mandriva linux not ubuntu and there are few laptops out there with Fedora pre-installed

But I don't see why not buying any laptop such as a thinkpad and load it with ubuntu linux :)

Just buy whatever laptop you like and install ubuntu

For classes IBM-Kuwait (KBM) is authorized redhat training partner but they have minimum number of attendees if I'm not mistaken

If I may suggest you start with online tutorials and google is your friend :)

Those netbooks may required drivers available inside that custom
distro, but I've read reviews about people installing other distros,
so you can try your luck.

Enterprise Linux is for server administration. There's RedHat courses
and SUSE ones. Take your pick.
